Pimento Cheese

This is the recipe my grandma used, except she didn’t use cayenne and she used a bit more mayo. Make sure to use a good quality cheddar cheese and grate it yourself. It tastes so much better and it's the perfect mindful moment! 


1 pound sharp cheddar cheese, grated (a mix of white and yellow is nice)

1 (4-ounce) jar diced pimentos, drained

1/2 cup mayonnaise (Duke's is the Southern favorite, but use what you like)

1/4 teaspoon cayenne pepper (optional, adjust to taste)

Salt and freshly ground black pepper to taste


  • In a large bowl, combine the grated cheese and drained pimentos.

  • Add the mayonnaise and to the cheese mixture. Stir well to combine.

  • Add the cayenne pepper (if using), salt, and black pepper. 

  • Taste and adjust seasonings as needed. You may want to add a bit more mayonnaise for a creamier consistency.

  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve with crackers, bread, celery sticks, or as a sandwich spread.
