This is the recipe my grandma used, except she didn’t use cayenne and she used a bit more mayo. Make sure to use a good quality cheddar cheese and grate it yourself. It tastes so much better and it's the perfect mindful moment!
1 pound sharp cheddar cheese, grated (a mix of white and yellow is nice)
1 (4-ounce) jar diced pimentos, drained
1/2 cup mayonnaise (Duke's is the Southern favorite, but use what you like)
1/4 teaspoon cayenne pepper (optional, adjust to taste)
Salt and freshly ground black pepper to taste
In a large bowl, combine the grated cheese and drained pimentos.
Add the mayonnaise and to the cheese mixture. Stir well to combine.
Add the cayenne pepper (if using), salt, and black pepper.
Taste and adjust seasonings as needed. You may want to add a bit more mayonnaise for a creamier consistency.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve with crackers, bread, celery sticks, or as a sandwich spread.
